In case of updating from 8.0 to 8.1 OTA = Full Firmware File (OTA 1639MB Size: YES2 :). So practically no difference. With successful firmware, the brick should not be, since both boot and system are fully overwritten by new images.
The only difference is when upgrading through OTA, the reboot occurs with a machine and you have to have time to intercept the first loading of the system after the firmware and boot into TWRP.
