Option 1) save the binary block, edit (if you know the structure of the storage format of the mesh in the asset) and replace the binary back (there is a binary replacement in the interface)
Option 2) make a test scene based on this modified mesh (but in the same version of unity), find this mesh as an unpacker, save the binary, and load the result as a binary block in the original game. Condition - the size should not exceed the original.
Option 3) wait a bit for the backing support of the mesh.

Regarding the colliders:
1) Colliders are not always critical when there is a modification for entertainment.
2) Mesh-based colliders will work (if the link of the collider goes to the same asset, ie the modified mesh)
3) The parameters of the non-mesh collider can be easily changed for GameObjects, there is a special tab for editing the parameters of the components. in recent versions it works well.
